Azu

Azu is a traditional dish in Tatar and Bashkir cuisine, typically made with meat (often beef or lamb), potatoes, and various spices. Here's a basic recipe for Tatar Azu:

Ingredients:

  • 500g beef or lamb, cut into cubes
  • 2-3 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2-3 tablespoons vegetable oil
  • 1 cup beef or vegetable broth
  • 1-2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions:

  1. Sauté the Meat: In a large pot, heat the vegetable oil over medium heat. Add the meat cubes and brown them on all sides.

  2. Add Onion and Garlic: Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.

  3. Add Tomato Paste and Spices: Stir in the tomato paste, paprika, cumin, salt, and pepper. Cook for a few minutes to combine the flavors.

  4. Add Broth: Pour in the broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the meat is tender.

  5. Add Potatoes: Add the diced potatoes to the pot. Cover and cook for an additional 20-25 minutes, or until the potatoes are cooked through.

  6. Serve: Garnish with fresh herbs and serve hot.
